Ingredients
For the sponge:
- 150 g flour
- 300 g grated carrot
- 1 spoon of baking powder
- 1 spoon of cinnamon
- a pinch of salt
- 150 g brown sugar or erythritol
- 2 eggs
- 100 ml buttermilk
- 100 g butter
For the filling:
- 2500 g of cream cheese
- 100 ml sour cream
- 50 g of powder erythritol (you can make your own by grinding it in a coffee grinder or a “Nutribullet” type of machine :))
- 1 small spoon of vanilla extract
- lemon and orange zest
Sponge:
1. Put all ingredients in one big bowl and mix it.
2. While doing that, preheat the oven and grease the springform cake tin with butter.
3. When the oven is preheated put the sponge in and bake it for 20 minutes at 180 C and for another 20 minutes at 160 C.
Filling:
1. Put all ingredients in a bowl and mix.
2. Put it all over the cake.
