No bake almond berries cheesecake cups

Difficulty: easy peasy lemon squeezy

Preparation time: 30 minutes

*No baking

Dry ingredients:

  • handful of almonds 
  • a tablespoon of cranberries
  • a tablespoon of chia seeds

Mushy 🙂 ingredients:

  • 100 grams of fresh cream cheese
  • a teaspoon of honey
  • coconut oil (a tablespoon for the base, a teaspoon for the cream)
  • half a banana
  • some blueberries
  • some raspberries

Steps

  1. Make the base: chop almonds and cranberries in a blender and add coconut oil.
  2. Spread the mixture evenly on the bottom of 4 small molds
  3. Make the cream: in a bowl mix cheese, honey and coconut oil until there are no lumps.
  4. Add chia seeds to the cream and mix well.
  5. Slice a banana.
  6. Let’s make layers! In the molds, put a row of bananas on the base. Then, add some more almond and cranberry base. Finally, add the cream.
  7. Leave the cakes in the fridge for 1 to 2 hours
  8. Add berries on top, if you like 🙂
