Healthy vanilla cookies

Dry ingredients:

  • 150 g almonds 
  • 50 g almonds butter 
  • 100 g walnuts 
  • 50 g coconut flour 
  • 40 g tapioca flour 
  • 20 g gold flax seeds
  • ½ teaspoon cardamom 
  • ¼ teaspoon grated orange peel

Wet ingredients:

  • 30 ml orange juice
  • 150 g agave syrup 
  • 50 g coconut oil (no scent)  

Steps:

  1. Make almond butter in a blender just with almonds (without anything else), blend until you have butter structure.
  2. Grind almonds and walnuts into flour. Add all the other dry ingredients.
  3. Grind flax seed in a coffee grinder or blender and add orange juice.
  4. Let the dough rest for about ten minutes.
  5. Mix wet ingredients and add them to the dry ones and mix the dough.
  6. Form the dough into buns or into shapes and bake at 150 ˙C for 7 to 10 minutes.
  7. Finally dip the cookies in melted chocolate and roll into coconut flour.
